Ingredients
300 g flour
100 g starch
1 pinch cardamom
200 g sugar
160 g ground walnuts
60 g whole walnuts
1 tbsp rum
200 g butter
2 eggs
1 tsp cinnamon
1 jar red jam (e.g., forest fruit without seeds)
2 packs 300 g marzipan mass
1/2 pack for storage
Powdered sugar for rolling out the marzipan
1 pack cake glaze (cocoa)
Instructions
Sift the flour and starch into the mixing bowl.
Make a well in the center and add the egg.
Add dough ingredients:
Add cardamom (preferably use cardamom pods and crush them in a mortar), sugar, walnuts, rum, cinnamon, and butter (in small flakes) around the edge of the flour well, and knead everything into a homogeneous dough.
Chill the dough:
Chill the dough for about 30 minutes in the refrigerator (wrapped in cling film).
Roll out and cut the dough:
Roll out the dough on a floured surface (knead it briefly with your hands first) and cut out pairs of stars in the desired shape.
Bake the cookies:
Bake the stars in the preheated oven for 8-10 minutes (do not let them get too dark).
Heat the jam in a small pot.
Spread jam on the cookies:
Spread jam on half of the cooled stars (works best with the back of a teaspoon).
Roll out and cut marzipan:
Roll out the marzipan mass with plenty of powdered sugar and also cut out stars (we need half as many marzipan stars as walnut stars).
Place the marzipan stars on the jam stars.
Assemble the cookies:
Spread jam on the bottom of the other half of the walnut stars and place them on the marzipan stars.
Melt the cake glaze in a water bath meanwhile.
Decorate the cookies:
Spread cake glaze on the top walnut stars and decorate with whole or chopped walnuts.
