Turkey Cream Stroganoff

Ingredients

  • 100 ml peanut oil
  • 2 kg turkey strips
  • 250 g butter
  • 4 large onions
  • 1000 g white mushrooms
  • 6 tbsp flour
  • 2 liters cream
  • 500 ml white grape juice or white wine
  • 3 tsp salt
  • 2 tsp white pepper

Instructions

  1. Heat peanut oil: First, pour the peanut oil into a very large pan. If you don’t have such a large pan, you will need to cook the meat in two batches.
  2. Brown the meat: The turkey strips are browned until they are nicely white. Don’t cook them too long, or the meat will become dry.
  3. Drain the meat: Now drain the turkey strips. The oil is no longer needed.
  4. Prepare the mushrooms: Now prepare the mushrooms. Slice them, put them in a bowl, and dust them with flour.
  5. Sauté the onions: In a large pot, add half of the butter with the onions and sauté the onions lightly. Just sweat them, don’t brown them.
  6. Add the mushrooms: Then add the mushrooms and the remaining butter to the onions and sauté for a short time.
  7. Add cream and white wine: Once the mushrooms shrink, you can add the cream and white wine.
  8. Cook and reduce: Now let the mixture come to a boil and reduce it a little until it is nice and creamy.
  9. Add the meat and season: Finally, add the turkey strips back in and season with salt and white pepper.
  10. Cook and serve: Let it cook for another 5-10 minutes and it’s ready to serve.
