Cinnamon Cardamom Yeast Rolls

Ingredients

  • 650 g flour type 550
  • 150 g sugar
  • 300 g butter
  • 250 ml milk
  • 21 g fresh yeast
  • 3 medium eggs
  • 200 g brown raw sugar
  • 30 g Ceylon cinnamon
  • 0.5 tsp cardamom

Instructions

  1. Prepare butter: First, take the butter out of the fridge to reach room temperature. Divide 300 g of butter into 100 g for the dough, 150 g for the filling, and 50 g to grease the baking dish.
  2. Sift the flour into a bowl. Use type 550 flour.
  3. Mix ingredients: Add 150 g sugar, 100 g butter, 250 ml milk, 21 g yeast, and three eggs to the bowl.
  4. Combine dough: Mix the dough by hand, folding rather than kneading. This adds more air, helping the rolls rise better later.
  5. Let dough rest: Cover the dough and let it rest in a warm room (about 22°C) for 1.5 hours.
  6. Prepare filling: Mix the brown sugar, Ceylon cinnamon, and cardamom. Divide this mixture into one-quarter and three-quarters. The larger portion will be used as the filling, and the rest will be for the baking dish.
  7. Roll out dough: After 1.5 hours, roll out the dough into a rectangle. Spread 150 g butter and three-quarters of the cinnamon-cardamom mixture evenly on top.
  8. Roll the dough loosely from one long side.
  9. Cut rolls: Cut the rolled dough into pieces that match the height of your baking dish.
  10. Prepare baking dish: Grease the baking dish with 50 g butter and sprinkle it with the smaller portion of the cinnamon mixture.
  11. Place the rolls into the prepared dish.
  12. Let rolls rise: Let the rolls rise at room temperature for at least 2 hours.
  13. Preheat the oven to 180°C (top/bottom heat).
  14. Spray rolls: Spray the rolls with a little water and bake them for 20 minutes.
  15. Enjoy rolls: Enjoy the delicious rolls after baking for 20 minutes.
  16. Optional topping: Optional: For a topping, mix 150 g cream cheese, 50 g powdered sugar, 16 g vanilla sugar, and 0.5 tsp vanilla extract. Spread it over the rolls if desired.
