Ingredients

  • 400g spaetzle
  • 125ml cream
  • 125g Emmental cheese
  • 25g Gouda
  • 0.5 tsp salt
  • 0.25 tsp 24g white pepper
  • 25g butter
  • 2 large onions
  • 2 tbsp breadcrumbs
  • 10g breadcrumbs
  • 50g Gouda
  • 30g Emmental cheese

Instructions

  1. Note: This recipe can easily be made with fresh spaetzle from the supermarket. Depending on the brand, it can be 400g or 500g.
  2. Boil water: First, bring about 2 liters of water with 1 tbsp of salt to a boil in a medium-sized pot.
  3. Cook spaetzle: In the boiling water, heat the spaetzle for just 2-3 minutes, then drain.
  4. Warm the cream: Next, place the cream in a large pan and gently heat it (on the lowest setting).
  5. Melt cheese: Melt the Emmental and Gouda in the cream, then add the salt and pepper.
  6. Fry onions: In a second pan, fry the onions until golden brown, then add the breadcrumbs at the end. Wait briefly after adding the breadcrumbs until they also turn brown (but not black).
  7. Mix everything: Now it’s time to combine everything. First, add the drained spaetzle to the large pan. Mix carefully to avoid breaking the spaetzle.
  8. Add cheese: Then remove the large pan from the heat and add the Gouda and Emmental again (don’t stir, as this will create the crust later).
  9. Finally, add the onions.
  10. Bake: Place the large pan in a preheated 200°C oven for 10 minutes.
