Basic Recipe for Tomato Sauce with Ground Meat

Ingredients

  • 8 tbsp 50 g olive oil
  • 4 450 g onions (medium)
  • 4 cloves 10 g garlic
  • 800 g mixed ground meat
  • 800 g beef ground meat
  • 1.5 tbsp 20 g salt
  • 1.5 tubes 300 g tomato paste
  • 6 packs 3 kg strained tomatoes
  • 3 tbsp 8 g dried oregano
  • 0.5 tsp 1 g dried thyme
  • 5 tbsp 14 g dried basil
  • 1 tsp 3 g paprika powder (sweet)
  • 4 tsp 9 g paprika powder (spicy)
  • 2 tsp 4 g black pepper (ground)
  • 1 tsp 1 g cayenne pepper

Instructions

  1. Chop onion and garlic into small cubes.
  2. Add the olive oil to the pot and heat lightly.
  3. Sauté: Sauté onions and garlic until they become translucent.
  4. Cook ground meat: Add ground meat and salt and cook it thoroughly. The salt will draw out a lot of water, which is intentional. This water should be reduced until the meat is crispy but not burnt.
  5. Add tomato paste: Now add the tomato paste. Stir well and heat through.
  6. Then add the strained tomatoes.
  7. Prepare spices: Finally, weigh and mix all spices in a bowl. Then add them to the sauce.
  8. Bring the sauce to a boil.
  9. Let it simmer: After boiling, turn off the stove and let the sauce sit on the hot plate. Let it simmer for 10 minutes as the stove cools, stirring occasionally.
  10. During these 10 minutes, you can cook the pasta.
