Simple Phirni Recipe

Ingredients

  • 60 g Basmati rice
  • 200 g water
  • 2 tbsp 30 g unpeeled, ground almonds
  • 25 g shelled, unsalted pistachios (coarsely ground)
  • 1 tsp 1 g cardamom powder
  • 1 liter milk (1.5% fat)
  • 1/4 tsp turmeric
  • 100 g sugar

Instructions

  1. Soak the rice: First, soak the rice in water. At least 45 minutes, preferably longer.
  2. Drain the rice: After soaking the rice, use a fine sieve to drain the rice.
  3. Dry the rice: Next, place the rice on a cotton dish towel and dry it. Fold all four corners of the towel until the rice is completely wrapped, then roughly crush the rice by rolling it back and forth (it can also be done with a food processor, but it should be roughly chopped, not finely ground).
  4. Remove remaining moisture: After crushing the rice, place a paper towel underneath and over the rice packet and remove the remaining moisture for about 10 minutes.
  5. Place the ground almonds in a bowl.
  6. Prepare the pistachios: Peel and weigh the pistachios. Then, coarsely grind the pistachios and add them to the almonds.
  7. Mix the spices: Add the cardamom to the pistachios and almonds and mix.
  8. Next, heat the milk until it boils.
  9. Simmer the milk: Then, simmer the milk on low heat, stirring in the almond-pistachio-cardamom mixture. Continue stirring until it has reduced by half (about 30 minutes, allowing it to simmer gently).
  10. Add the turmeric while the milk is simmering.
  11. Cook the rice: Once the liquid has reduced by about half, add the rice and cook it until soft according to the cooking time on the package.
  12. Add sugar: Finally, add the sugar and continue to simmer until the mixture has a creamy, pudding-like consistency. Remove the pot from the stove and stir occasionally to prevent burning.
  13. Fill the Phirni: The Phirni can now be poured into small bowls or glasses to serve, but it should be about lukewarm. For decoration, sprinkle chopped pistachios on top.
  14. Cool: Before serving, refrigerate for at least 1-2 hours to allow it to fully cool and reach the desired consistency.
