Ingredients

  • 300g flour type 405
  • 1 pinch of salt
  • 2 tsp 10g baking powder
  • 100g sugar
  • 200g butter
  • 1 egg (M)
  • 500g mascarpone
  • 3 tbsp
  • 250g low-fat quark (0.2%)
  • 4 tbsp
  • 200g whipped cream
  • 1 package
  • 37g vanilla pudding powder
  • 3 eggs (M)
  • 175g sugar
  • 16g vanilla sugar
  • 500g pitted plums
  • 1 tsp cinnamon
  • 1.5 tsp sugar

Instructions

  1. Prepare the base: The base is quite thick. If you prefer a thinner cake base, you can reduce the ingredients for the base by 1/4. For the base, melt the butter in a small pot until it becomes liquid. Sift the flour into the mixing bowl. Add the salt, baking powder, and sugar. Mix. Then add the egg and mix again. After that, add the melted butter and stir into a dough. Place the dough in the greased cake pan and form the base. Now pre-bake the base for 10 minutes at 170°C, then remove it from the oven.
  2. Prepare the filling: In the mixing bowl, add the whipped cream and eggs. Then mix (using a hand mixer) and add the sugar and vanilla sugar. Now, stir in the pudding powder until it forms a smooth mixture. Finally, add the mascarpone and quark and mix again for a few minutes. Pour the filling onto the base.
  3. Prepare the topping: For the topping, remove the pits from the plums and arrange them on the cake. Note: The quantity refers to pitted plums. Mix the cinnamon and sugar together and sprinkle it over the plums.
  4. Bake: Now, bake the cake in the oven at 170°C (conventional heat) for 60 minutes.
  5. Let it cool: After removing the cake from the oven, let it cool for a while, then refrigerate for at least 2 hours.
