Ingredients

  • 420 g flour
  • 300 g butter
  • 180 g peeled ground almonds
  • 90 g sugar
  • 3 egg yolks (M)
  • 2 packets 16 g vanilla sugar
  • 1 vanilla bean (seeds)

Instructions

  1. Sift the flour into a bowl.
  2. Prepare dough: Add butter, sugar, ground almonds, and egg yolks and mix with a hand mixer (dough hooks) to form a compact dough, or alternatively, knead with your hands.
  3. Chill dough: Wrap the dough in plastic wrap and chill for about an hour in the refrigerator.
  4. Knead dough: Knead the dough again briefly before shaping (it will be a bit crumbly, but that is intended).
  5. Prepare work surface: The work surface usually does not need extra flouring, as the dough does not stick. If it does, add a little more flour or almonds.
  6. Shape crescents: I always shape the crescents by first rolling the dough into a long sausage (at the desired thickness) and then rolling it a bit thinner at the ends to create the typical crescent shape.
  7. Bake: You can bake two sheets at once with convection heat, which saves some time.
  8. Bake crescents: Bake the crescents at 150°C (convection) for 13 minutes, then dust with powdered sugar and vanilla sugar, and allow to cool completely as they can break if handled while still warm.
  9. Tip: Don’t make a double batch unless you’re really up for it!
