Our Nuremberg Gingerbread

Ingredients

  • 200 g ground hazelnuts
  • 200 g ground peeled almonds
  • 100 g chopped walnuts
  • 360 g sugar
  • 4 packs, 36 g vanilla sugar
  • 2 tsp 20 g cocoa powder
  • 2 tsp 15 g baking powder
  • 4 tsp 10 g cinnamon
  • 100 g flour
  • 1 tsp ground gingerbread spice
  • 2 egg yolks (M)
  • 100 g candied lemon peel
  • 100 g candied orange peel
  • 10 egg whites
  • 400 g cake icing
  • 36 wafers (70mm)

Instructions

  1. The recipe works best when using two bowls.
  2. Mix dry ingredients: In the first bowl, add all the sifted dry ingredients and mix them well. Note: Be sure the gingerbread spice is evenly distributed.
  3. Separate the eggs: In a tall mixing bowl, separate the 10 eggs into 10 egg whites and 2 egg yolks as well as 8 egg yolks. The 8 egg yolks can be used for another recipe and are not needed here.
  4. Chop the candied lemon and orange peel: Now chop the candied lemon peel and orange peel and add them along with the 2 egg yolks to the second bowl.
  5. Fold in the egg whites and dry ingredients: Next, fold the egg whites into the second bowl, then slowly incorporate the dry ingredients from the first bowl.
  6. Spread dough on wafers: Now, place 9 wafers on each baking tray and add 1 tablespoon of dough on each.
  7. Bake the gingerbread: Now, bake the gingerbread for 17 minutes at 170°C (top/bottom heat) in the oven.
  8. Glaze the gingerbread: Finally, melt the cake icing in a water bath and glaze the gingerbread.
